TASTING NOTES
The Moscato Bianco grapes used are grown in 4 hectares of vineyards at 500 meters above sea level, completely exposed to the south, from vines with an average age of 45 years. This allows a very low yield of 55 hl per hectare, a high concentration of aromas and at the same time a marked acidity that is often lacking in these wines. After soft pressing, the musts are cold clarified in steel tanks, after that they are transferred to an autoclave for fermentation at a very low controllad temperature, to emphasize the aromas of Moscato such as hawthorn and jasmine. The bottled wine has a high sugar residue (130 g/l), a low alcohol content of 5.5% vol and a fine perlage. The high acidity makes it very fresh and not cloying, enhancing the floral aromas, the notes of orange blossom but at the same time marked hints of officinal herbs, among which sage emerges above all. This Moscato d'Asti Hiku 2022 is an elegant, aromatic and fresh wine that goes perfectly with Panettone or Colomba -Typical italian Christmas and Easter cakes-, fruit tarts and all dried fruit. However, it is also perfect for a plate of ham and figs or melon or with fresh salami. Incredible is the combination with hot and spicy dishes, typical of Indian and Thai cuisine.
