The Kalk & Kreide Sauvignon Blanc Bio 2021 is a signature wine. This organic Gutswein belongs to Weingut Tement's most important wines. The grapes used grow on a coral limestone soil. This gives a wine with an intense minerality. After spontaneous fermentation, the Sauvignon Blanc Kalk & Kreide matures on its lees between 6 and 12 months in stainless steel tanks. It is bottled without filtration to preserve its complete integrity. On the nose, ripe pears merge with aromatic elderberries. If left in the glass long enough it reveals spicy cassis and salted lemons on the palate. Very complex and minerally. Ripe, crystal-clear wines from perfect grapes: these are the characteristics of the 2021 vintage, which is likely to be a vintage that will be talked about for a long time because of the great quality of the grapes. The months of January and February were characterised by perfect, dry and sunny days. These were ideal conditions for pruning and tying. March was rather cool and wet, and budding took place slightly later than in previous years. April and May were also dominated by cool and wet weather. The beginning of summer was moderate, with late flowering lasting for several weeks. July and August were very rewarding months, with the vines almost completely catching up. The dry and warm autumn then created first-class conditions. In short, expectations for the wines of the 2021 vintage are absolutely high, and we generally expect incredibly elegant, very juicy and concentrated wines with a firm structure and harmonious acidity. Ready to drink in 2023, it can be stored for another six years. The glass closure is a characteristic feature.
