TASTING NOTES
Alcoholic fermentation takes place in stainless steel wine vats at a controlled temperature, favouring prolonged contact of the skins with the must. Malolactic fermentation takes place in November immediately after alcoholic fermentation. Maturation is 6-7 months in wine vats and 3 months in bottles. The 2021 vintage began with a mild winter even though it was rich in precipitation, including snowfall, which ensured an excellent water supply in the soil, which was essential for the summer, which on the contrary was the least rainy in recent years. The Nebbiolo harvest began in the last few days of September and culminated in the second week of October. The bunches were healthy, with optimal phenological ripening, facilitated by the drop in temperature and the temperature fluctuations that could be observed from the second half of September onwards. From a quantitative point of view, the production load was optimal and well balanced, with visibly smaller berries than the previous year. These factors resulted in an important polyphenolic endowment, essential for producing structured and balanced wines that are destined to last. It has an intense garnet red colour, the nose is full and fruity while the taste is full and harmonious, slightly dry with a lingering aftertaste.
