TASTING NOTES
It is the millesimato of the Cabochon family, obtained from the soft pressing of selected grapes and it is the result of over 54 months of aging on the yeasts. It is a Franciacorta Brut obtained 70% from Chardonnay and 30% from Pinot Noir. The true essence of the Morainic Hills of the communes of Franciacorta is immediately recognized. The particular weather conditions of the 2014 vintage affected the characteristics of the base wines which show rather high acidity to the advantage of greater freshness and hainess. Ripening slowed down by daytime temperatures that were never too “August”, and the accentuated temperature variations contributed to bringing grapes with high malic acidity and more than intact aromatic content to the cellar. There were all the conditions for a year of great finesse and elegance. Gold yellow color, fine and persistent perlage. On the nose it reveals hints of hazelnut, pastry, sultanas, light coffee and toasted notes. In the mouth there is a wide and generous wine, of great complexity, balanced with an acidic and salty finish characterized by notes of exotic fruits.
