Lavantureux Fréres is a family-run winery with twenty hectares of vineyards in the small village of Lignorelles. The main principle that is followed is 'Viticulture Intégrée' in the vineyards: no weeding and no pesticides, only natural ground cover or ploughing. In the cellar, an attempt is made to accompany the wine, not guide it. Thermoregulation is strictly used to conduct the vinification in order to obtain all the finesse and complexity of the fruit. Ageing takes place in stainless steel or French oak, depending on each cuvée and the characteristics of each vintage. The Chablis Vieilles Vignes comes from three plots of approximately one hectare each, with 60-year-old vines that reveal the privilege of age: refinement and character. The three plots that make up this Chablis Vieilles Vignes are all located in Lignorelles. The vines are double Guyot trained. The yield is naturally rather low, which is why the wines always have great aromatic richness. Ageing lasts an average of 1 year: 60% in steel, to preserve the intensity of the aromas, and 40% in wood for 3 or 4 years. Blending balances the wine's natural richness and minerality. Hints of ripe fruit develop on the nose, due to the concentration of the harvested grapes. These aromas are echoed in the mouth, which then give way to an intense and mineral finish. This wine is a perfect accompaniment to lobster, shellfish and generally tasty fish dishes. It is also very pleasant as an accompaniment to grilled meat dishes and roasts. This Chablis Vieilles Vignes has an important longevity and can be enjoyed even after 15 years in the bottle.
