TASTING NOTES
Elle is the flagship wine of Laura De Vito's winery. The vineyards extend between 500 and 600 metres above sea level in Lapio, Avellino. The grapes used to produce Elle are selected from all the vineyards, with the percentage of grapes from each plot varying according to the vintage. This guarantees a consistent and representative product over time. This section explains the origin of the name: Elle, which stands for the initial of Lapio. The 2021 vintage in Irpinia was the driest in the last 15 years, with only 520 mm of rain. Despite the low rainfall and above-average temperatures during the summer, the grapes were in excellent condition, with optimal sugar concentrations and balanced pH and acidity. In addition, they presented an interesting endowment of aromatic precursors, which will undoubtedly result in wines of great profile and quality. The Fiano grapes are harvested by hand in the second week of October and immediately taken to the cellar for soft pressing. Fermentation takes place in temperature-controlled steel tanks, followed by a 9-month maturation period, also in steel. Elle remains in the bottle for at least 15 months to refine before release. Aromas of lime, pear, hazelnut, mint and mountain herbs can be perceived, softened by the long refinement.
